Tomorrow is Christmas at our house! Our best friends Dallas Evans and Jessica J. Evans are here for the winter and it seemed appropriate to celebrate together! I have the crown roast of pork marinating, the stuffing is cooling on the counter. The Black Forest cake for dessert is in the fridge waiting to be decorated. Tomorrow the Rosemary scalloped potatoes, green beans, kale...yes...kale and cauliflower salad will all be made. For the appetizer I'm making grilled eggplant caponata bruschetta! I'm so excited to be cooking! Thanks Rosemarie Ciani Myerjack and Susanne Myerjack for the use of the roasting pan....what would I do without you girls!!
