Spicy Shrimp, Bacon and Cheesy Grits

For the Cheese Grits with Bacon:

2 cups water
Salt and salt and pepper shrimp
1/2 cup Old-Fashioned Grits
3 tablespoons butter, cut into pieces
1 cups shredded sharp cheddar cheese
4 slices bacon, chopped (I use turkey bacon)
2 teaspoons lemon juice
1 tablespoons chopped parsley
1 tablespoon chopped cilantro
1/2 cup sliced scallions
1 large clove garlic, minced

For the Shrimp:

1 big package frozen shrimp (21-25 count pag) peeled and deveined
1 tbsp. Extra Virgin Olive Oil
3 tbsp. Blackened or Cajun Seasoning

Bring water to a boil. Add salt and pepper. Add grits, stirring constantly until there are no lumps. Cook until water is absorbed, about 15 to 20 minutes. Remove from heat. Stir in the butter piece by piece. Next, stir in the cheese to combine thoroughly with the grits. Keep warm.

As the grits are cooking, rinse shrimp and pat dry. Fry the bacon in a large skillet until browned about 5 minutes; remove the bacon to a paper towel lined plate. Into the remaining bacon drippings, add the shrimp and cook until they turn pink, about 10 minutes. Add lemon juice, parsley, scallions and garlic. Saute for 3 minutes. Add bacon bits to grits and fold in. Add shrimp on top and SERVE!
