I didn't have enough sauerkraut juices from my homemade batch to yield for this recipe, so I used a few TBSP of apple cider vinegar and some water instead. The cooked kraut here has a bit of a dingy hue since I let it brown (like I would a hash), but what's sacrificed in color is more than made up for in texture and flavor!
