Test batch - watermelon sorbet.
I juiced a small watermelon in the fall and froze it. At the time I posted the juicing and planned a midwinter fresh fruit sorbet. I'm not usually a big fan of watermelon in any form except fresh. Once you start pulling it apart the flavor starts to change and it tastes "stale" to me. I added some fresh ginger purée to the base and some apple juice concentrate before I froze it. Today I heated up some pectin in a little bit of the juice and th...en added it to the base to stabilize it and blended the sugar in. The resulting sorbet is probably a little too sweet for my taste, however the ginger and the citric acid from the pectin have sharpened the overall taste considerably and it doesn't taste "stale" at all. Nothing like fresh tasting watermelon in January. For the final recipe, I might do a Vodka Watermelon Sorbet. I may be bringing some of this test batch into work for people to test out. Anybody interested?
